Comparing the suitability of food production systems Food and Beverage Operation Management Contents Task 1 Question Task 1 Answer Task 2 Question Task 2 Answer Task 3 Question Task 3 Answer Reference Task 1 Question 1.1) Discuss the characteristics of food production and food and beverage service system 1.4) Justify the suitability of systems for particular food and beverage outlets Task 1 Answer I have been assigned by the management to turn up with a better method in the kitchen to enable the hotel to produce good production in order to cater customer demand. I understand that the hotel currently adopting a conventional traditional production method in the main kitchen as they believe the food must be prepared by experts to maintain quality and the originality of the food itself. Conventional traditional production method is producing utilizing mainly fresh ingredients and traditional cooking methods (Foskett Paskins, 2011). In this system, the organization of the kitchen is based around the division of tasks into areas or groups of people performing analogous task which is highly in cost such as salaries and their equipment although it allows for specialization and development of a high level of skill, however it is labour intensive. Using conventional traditional convection method also means the production of the foods and beverages are masses and need to be similar or above the benchmarks which consume a lot of time to inspect the production and require more workers. In the traditional conventional system, they use the kitchen brigade where there can be many separate sections in the kitchen with staffs performing specific aspects of food production which is lead by the head chef. The method I have chosen which is superior to the conventional method is cook-chill method. Cook-chill method is food production storage and regeneration method utilising principle of low temperature control to preserve the qualities of processed foods. (Foskett Paskins, 2011) It is based on the normal preparation and cooking of food followed by rapid chilling storage in controlled low-temperature conditions above freezing point of 0-3 degree Celsius and subsequently reheating immediately before consumption which is done in the finishing kitchen. It is also used in volume catering such as hospital. In cook-chill system, they also use a traditional partie system which includes the head chef, deputy chef, chef de partie and cook but less staffs because cook-chill system does not use a large area and require minimum staff to work. The reason I chose Cook-chill systems because it requires low capital investment and minimum staff. Almost any food can be cook-chilled provided that the correct methods are used during the preparations. And the ingredients are already been prepared expect for the portioning unlike the traditional conventional method where they had to prepare everything from scratch for example they had to buy the meat fresh from the market or the supplier and send it to the section to cut the meats and preparing it for portioning. The purpose of using cook-chilled system is to prolong its storage life which is ideal since the hotel also caters for the Royal Brunei In-flight Catering. The advantages of using cook-chill system to the customer are it increased variety and selection, where there is a wide range of cuisine to choose from. It also improved the quality of the food because the standards are well maintained. The services can be maintained at all time regardless of staff absences because the foods are already prepared. Furthermore using cook-chill systems are less dependence on price fluctuation. The disadvantages of using cook-chill system are the textures and flavour may changes if the foods are not prepared carefully which can lead to customer dissatisfaction. When customers are not satisfied, they tend to spread the news that the hotel’s restaurant are not up to standard which lead to loss of customers. The service I have chosen for the hotel is American service. American service is portions of food are plated in the kitchen and served to each guest by waiter or waitress. The advantages of using American service are it is fast and simple and also inexpensive because it require less staffs to served the guest. Lastly using American service does not require staff to be highly trained technical staff hence less cost. The disadvantages of using American service are there is less showmanship which means the presentations are not beyond the customers expectation compared to silver service or English service. Finally using American service reduces personalized attention. This is because there is less staff to attend the customer which may affect the satisfaction of the customer. I am going to compare the seven stages in food and beverages between the traditional conventional system and the cook-chill system. Task 2 Question 1.2) Discuss factors affecting recipes and menus for specific system Task 2 Answer As the manager of the food and beverage for The Empire hotel and Country Club and as the supplier for the Royal Brunei In flight catering, I have to discuss the factors affecting recipes and menus for the food and beverage system. The first factor is about the type of menu choose for the in flight catering. There are two types of menu which are ala carte and table d’hote. Table d’hote is a full course meal that offers a limited choice within each course and served at a fixed price (Free Dictionary, n.d). Most airlines use table d’hote because it offers limited menus and use both in the business class and economy class. The prices are fixed which is easier for the airlines to calculate their cost and include it in the ticket bills. Meals that are included in the table d’hote are appetizer such as salad, main course and desert. Ala carte is where the dishes are listed separately and individually priced (A la Carte, n.d). It is not recommendable for airlines to utilize because it is inconvenient and maybe hard for the customers to pay because they may change their money currency to other and maybe it is insufficient. The best meal for in flight would be poultry because chicken is easy to prepare in a healthy way by grilling, roasting, sauteing, poaching, stir-frying and baking. According to the Dietary Guidelines for Americans, we should be eating lean sources of protein, including chicken. However chicken are likely contaminated with Salmonella. Salmonella is a bacterium that occurs mainly in the gut of the poultry which causes food poisoning (Foskett Paskins, 2011). But we make sure it doesn’t happen by checking with our supplier and make sure that our supplier has a certificate that shows they can legally and certified from the government to operate. Healthy eating has become a trend nowadays as according to a study conduct by Nielsen (2015). The percentage of adults around the world is overweight with an increase of 30% over the past 30 years while children are 47%. According to statistic World Health Organization, WHO, shown that 1.6 billion adult are facing overweight and 400 million people are obesity. This is serious problem to the people in the world. Due to this problem, consumers from around the world are starting to become more health conscious. Therefore we will modify the food into more healthier such as using less oil, grilling and using olive oil instead of palm oil. Different people have different needs. Some people have different outcome when consuming food or beverages. The dangerous thing is when they have food allergy which may be fatal if consume. Apart from that, the individual consumer need such as those with special diets for example; consumers with high cholesterol will need low a cholesterol meal while vegetarians will be offered a vegan meal. Other examples are gluten free meal, non lactose meal, low sodium meal, bland meal, high fiber meal, low protein meal, children and infant’s meal (Royal Brunei Airlines, n.d.). That is why individual customer needs special diets such as no sugar or no peanuts. The customers should tell the staffs or in their booking reservation that they need special dietary to ensure that they will receive exceptional meals with special dietary. In accordance to Islamic law, any Islamic airlines are not allowed to serve pork or alcohol unless it is requested by the consumers. But since the Empire Hotel and Country Club Brunei’s restaurant has Halal certification, we will not serve any pork or alcohol. Task 3 Question 1.3) Compare the cost and staffing implications for different systems Task 3 Answer Before I present my proposal to the management, I will make as any changes will incur cost, therefore I will compare the cost and staffing implication for each system which is the traditional conventional method and cook-chill method. From the table above, cook-chilled has proven to be better than traditional conventional method. From the cost associated with products, in conventional method, the ingredients have to bought daily and they need to prepare the ingredient right after it arrives unlike the cook-chill, ingredients are already been cut from the supplier and ready to be chilled to ensure its quality are not degraded which save a lot of time and energy of the staff. Also the finished product of the conventional method cannot last long unlike the cook-chill method where the product can last at least 5 days (Foskett Paskins, 2011). Although the machinery for cook-chill are expensive but for long term investment it is worth because there are less staff needed to operate in the kitchen which means it is easier to handle the kitchen. In addition, there are lesser equipments needed because most of the ingredients are already been prepared (James, 2012). And lastly, only few staffs needed for cook-chill which means fewer salaries to pay to the employee unlike the conventional method where they need more staff to operate in different part of the kitchen and it is hard to keep track of their well being and the work time in the conventional method is longer because they have to prepare the ingredients from scratch (Royal Brunei Airlines, n.d.). English literature: History, Authors, Books, & Periods Essay

Dear Kipling, You are my favorite writer in the English Language who well versed in both. Prose and verse in the late- nineteenth and early- twentieth century ’s.Being interested in your creations I took more interest in knowing about yourself. You were born in Bombay, British India on 30 December 1865. In 1870 you were taken to England and stayed with a foster family and did your education there.Later you came to India in 1882 and worked as a journalist, writing poetry and fiction in your spare time. I had gone through your oeuvre and I really marveled which made me go into a deep thought of your perspective on imperialism. In 1888 you wrote ‘plain Tales from the Hills’ which won success in England. Again in 1889 you went to live in London. There you met your soul mate Caroline Balestier and married her in 1892.And then you moved to a place called Vermont in the United States where her family lived, your two daughters were born there.Then you wrote the most fantabulous work â €˜The Jungle Book’ in1894.I think you got the inspiration to write this from your environment. Because when you were writing this, your abode was in the forested area called Vermont. Alright!I have to stop here Because I want to talk more about this work. So now I am going to discuss the rest with you. In 1896, you moved with your family from Vermont to England because of some family affairs. I do not want to discuss that. Because that is not my area, isn’t it? Then your most beloved son John was born in 1897, to whom you later addressed the poem ‘If’ which very much exhibited the qualities of men during Victorian times and it is often discussed by the critics as a â€Å"stoic poem†. Then you wrote the series of works like ‘Stalky and Co’ in 1899, ‘Kim’ in 1901 and ‘Puck of Pook’s Hill’ in 1906. Your contribution of ‘Just So Stories’ in 1902 were originally written for your beloved daughter Josephine,   who died unfortunately at the age of six because of pneumonia. That’s why this work reflects the stories of children. When I was analyzing your work I came to know that it offers us a clear and sensitive picture of English people who lived in the late 19th century in India. And it is obviously seen that you are an â€Å"accurate reporter† and was capable of giving the faithful account of the commonplace and people of what you had seen. In this time, I want to take account of your uni que perspective.This is one of the things that I loved in you –that your works do not reflect anyone else’s ideologies.It always stands a remarkable thing. The preliminary study of your works had revealed an idea which is to be taken into consideration. It displays that your works of six essays, ten addresses, four volumes of letters, five full-length books, one hundred and eleven short stories, and one hundred and seventy-eight poems were in quite touching with the phenomenon called ‘culture shock’. Kipling, don’t consider me as an over-talkative person for I am going to explain what is a culture shock. Because you know what it means, but the readers of this letter have to know about it something. Culture shock is a synonym for homesickness, an experience normally associated with insecurities of childhood. This will occur when a person is suddenly removed from a familiar environment to an unusual one commonly exhibits confusion and hostility. You suffered from this effect for about eight such times at approximately five years intervals of your first forty years of your life. Even though this happens continuously, your works were highly outstanding. But some critics made this culture shock as wide as possible and criticized you every angle. I had no opinion on this matter. But I want to tell something, I think because of this culture shock only you could deliberately deliver your mind about the things that surround you, otherwise, I would miss this unique use, Kipling.Once again I repeat that it was my own opinion and it can be interpreted in some other way. Another criticism is about your famous phrase ‘White Man’s Burden’. Actually, it means â€Å"the alleged duty of the white peoples to bring their civilization to other peoples regarded as backward†. But the critics took this phrase and classified you as a ‘Racist’. Their perspective is that you are the one who differentiated as white man and backward, so they criticized in that way. But I want to look it from your view. I think you wrote it in the perspective of how I understood ie.,† Imperialism was not just a way for countries to grab power; it was also a form of humanitarianism, a way to help fewer fortune people by the governing people.† So only you mentioned that it was the responsibility of ‘White Man’s Burden’. Alright Kipling, now I come to the point which I mentioned earlier to discuss that is – The Jungle Book. Actually, it is a collection of seven different short stories. However, only three of them have Mowgli and the characters associated with him. While the rest four stories happened completely elsewhere and in different situations. When I came to analyze this piece of work I understood that its culture period is during British Raj – British ruling over India (1858-1947). So many critics call you as a racist, misogynist, and imperialist. And some argue that this piece was about the politics occurred at that time. All that shouldn’t matter anyway, because it’s a great story of imagination and above all, it opens up the relationship between you and the forest in India. And I also enjoyed the way Mowgli grows up and the way he and other animals interact with each other, it’s completely breathtaking. I believe that while you were undoubtedly a man of your time and country, your stories are less about politics and more about your own humanity. The story seems to be more similar to your life history. Though the scholars criticized this work in a di fferent way, I can’t deviate my views from the eyes of imagination and enjoyable experience which I had when I read it. Last but not the least adding to your accolades, Nobel Prize for Literature in 1907 making you the youngest and first English language writer increased my zeal towards the language. Massive Multiplayer Games Essay

With the rise and popularity of multiplayer games over the last two decades, the industry has created new games that catered to the taste and preferences of game players in different age groups. Likewise, as these games allow players to cooperate and compete against each other from different boundaries, there is now a rising concern of whether the game creates benefits to players or only serves as addiction to those who engage in such activities. Due to this, it is important to determine the scope and challenges surrounding massive multiplayer games to actively decipher appropriate strategies for further development. Understanding the Concept Looking at it, the term multiplayer games denotes from the ability of one player to actively take part in a video game together with patrons around the world in a simultaneous manner. ). These games allow players to cooperate and compete against each other on a large scale, often with other players around the world. It is a natural evolution to gaming with the widespread use of the internet that has opened up a global community. As far as the overall process is concerned, for players to participate in these games, you must first purchase the game and then pay a monthly fee to play to compete in the game. MMORP games that make the most money are those that keep people subscribed or buying new items for several consecutive months. The explosion in popularity and sales has drawn a much closer look into the attraction of gaming and its effect on game players. Consequently, there is a renewed interest in finding out the relevant effect of this activity particularly among gamers themselves. This has sparked the interest of researchers and everyone wanting to know what the craze is all about. Is it an addiction, or are there real benefits that draw the player in to these games? On one hand, we can see that these people to gain experience and recognition for their work. At the same time, it opens up the foundations of reaching out to individuals in different cultures with the game as a medium. However, that is precisely what draws the gamer in; it separates them from the real world. It is easy to understand the allure of MMOG’s on gamers. They take place in a separate universe, and you can create a character for yourself that is exactly the person you want to be. This game universe has it own rules, culture, and society of people with all kinds of interactions taking place. The possibilities for exploration are unlimited and there are no physical consequences to your actions. What do studies say? Relating this to research and studies, a 2007 Harris Interactive poll of 1,187 youths aged 8-18 gathered detailed data on youth opinions about video game play. About 81% of youths stated that they played video games at least once per month. Furthermore, the average playing time varied by age and sex, from 8 hours per week (responses from teen girls) to 14 hours per week (responses by teen boys). Teens (8-12 year olds) fell in the middle, with boys averaging 13 hours per week of reported game-play, and girls averaging 10. Harris concludes that 8. 5% can be classified as pathological or clinically ‘addicted’ to playing video games. (Harris Interactive) Dr. Douglas Gentile, Director of the Media Research Lab at Iowa State University and the director of research for the National Institute on Media and the Family, states, â€Å"It is important that people realize that playing a lot is not the same thing as pathological play. For something to be an addiction, it has to mean more than you do it a lot. It has to mean that you do it in such a way that it damages your life. This is why we based our definition on how pathological gambling is diagnosed in the DSM-IV. Almost one out of every ten youth gamers shows enough symptoms of damage to their school, family, and psychological functioning to merit serious concern. † (Harris Interactive) Lastly, to Dr. Suzanne Martin, Youth and Education Researcher at Harris Interactive, â€Å"The prevalence of video gaming in youth culture in combination with this level of pathological video gaming is great cause for concern and highlights the need for further research in this arena. † Gamers who were surveyed and classified as pathological were receiving lower grades in schools than their peers, were more likely to have video game systems in their bedrooms (65%), were spending much more time playing games each week (averaging 24. 5 hours per week), and were also more likely to have been diagnosed with an attention deficit problem. (Harris Interactive) Analysis The Harris Interactive report seems to indicate a considerable amount of usage among children and tweens; but does not indicate that it is a cause of the games themselves. A deeper look into other factors associated with gamers needs to be considered. Do these children or tweens spend more time at home because of both parents work schedules? Is there a correlation to the household income and the affordability of the games that makes them more accessible and appealing? Is there a correlation to the popularity of a video/media culture so much more accessible to children now that also plays an influence? There is apparently cause for some concern; but a deeper look in the other factors needs to be considered before a judgment can be Evaluation Evaluating these studies, it can be argued that there are indeed positive and negative consequences that can be deciphered as far as massive multiplayer games are concerned. Looking at it in a constructive manner, this process creates opportunities for players to discover and enhance their creativity within the specific game and platform. Moreover, it extracts the necessary skills needed in either to solve a quest or achieve a common goal. This in turn allows them to expand on their capabilities and create outcomes that will enhance their cognitive capabilities. On the other hand, there are also negative consequences of too much exposure in this area. In here, individuals can get addicted in the process and create a world of their own. Seeing this, players alienate themselves towards reality as they become immersed with the game they are involved in. Such idea can generate negative consequences psychologically, physically, and socially. Seeing this, it is then essential that a form of consensus and control be initiated in the process. This means that parents must actively create methods that will allow their children not only to immerse in such activity but also give them other options to consider. Though we may not be able to take away these things to children, having a specific playing time can encourage them to explore other possibilities available for them. By doing this, players can maximize the benefits of the game they play and limiting the possibilities of addiction that may be incurred during the process.
